This delicious Brilliant bangers & potato bake with peppers & jerk gravy is perfect for those chilly Autumn evenings - Super simple with no compromise on flavour or taste. Hearty & filling, this yummy dish is guaranteed to impress and great for sharing with friends and family.
This was my first time trying the Quorn ‘Brilliant Bangers’ and I must say I am so impressed with how versatile they are. They can be shallow fried, grilled or oven baked & the texture is SO good. For this recipe I chopped the bangers into chunky slices and shallow fried them & they came out perfect! I served this as a ‘one pot’ style dish and allowed friends to help themselves.

BRILLIANT BANGERS & POTATO BAKE WITH PEPPERS & JERK GRAVY (serves 3-4 people)
ingredients -
@quorn_uk brilliant bangers (I used 1.5 packs)
2 tbsp veg oil
4 large potatoes, chopped
3 sweet peppers, sliced
1 chopped red onion
1 tsp roast potato seasoning
1 salt
1 tsp pepper
1 tsp mixed herbs
1 tsp garlic powder
1 tsp paprika
2 tsp olive oil
For gravy
4 tbsp Bisto or any vegan gravy granules
1 tsp jerk marinade
3 sprigs thyme
2 bay leaves
1 lime
1 tsp brown sugar
1 spring onion
Method -
Boil peeled potatoes for roughly 15 mins or until soft, drain & season with roast potato seasoning, garlic powder, paprika, salt and pepper. Place on tray with a splash of oil & cook on middle shelf of preheated oven at 180 for around 30 mins or until golden brown & crispy . Keep an eye on them and give them and turn half way through.
While potatoes are cooking, add 3/4 tbsp of oil to pan, allow to heat for approx 1 min, chop brilliant bangers into chunks and shallow fry for around 5-10 mins, turning occasionally until cooked, set aside
Place peppers and onions in a bowl, drizzle some olive oil & salt & pepper & toss until coated
When potatoes are almost done, layer chopped peppers & onions over the potatoes and cook in oven for a further 10/15 mins or until soft
Now let’s make our gravy, add the bisto to some hot water in a small pot, add jerk marinade, thyme, bay leaves, lime, brown sugar, & spring onion and simmer for around 10 min
Finally layer the cooked sausages over the potato & pepper mixture, pour some gravy all over, sprinkle some chopped spring onion and enjoy!
