GARLICKY ROASTED TOMATO & KALE GNOCCI


This is so quick and easy to make, whilst also being wholesome and so filling! You literally fling it all in one pot and 20 mins later you're done. Enjoy!

Ingredients -

1 pack fresh gnocci

1 tins chopped tomatos

5 garlic cloves

1 pack kale

2 handfuls baby plum tomatos

tomato puree

2 handfuls closed cup mushrooms

2 tsp paprika

2 tsp cayenne pepper

2 tsp italian herb seasoning

olive oil

salt and pepper

1 lemon

Recipe -

Set the oven to around 200°C, chop the plum tomatoes in half and scatter on a baking tray and drizzle some olive oil over and sprinkle some salt, pepper and paprika. Place in the top of the oven.

While these are baking, heat a little oil in a deep frying pan

finely chop your onion and garlic and place in pan to fry until soft

slice the mushrooms and add to pan

Then empty 2 tins of chopped tomatoes into the pan, stir

add half of all the seasonings and stir until cooked through

then to the tomato mixture add 2 heaped table spoons of tomato puree and stir in

Then add the gnocci to the mixture, the rest of the seasonings & and juice of a lemon.

Once the plum tomatoes are cooked, remove from oven and add these to the pan too

place on low heat, cover and leave to simmer for 7-8 minutes

remove cover and add bag of kale

replace lid and leave for a further 1-2 minutes while kale cooks through slightly

stir in the kale and voila!!

Enjoy with some steamed tenderstem broccoli
